A magical encounter between the must and the indigenous yeast

In our French oak barrels the fermentation process produces more than a thousand substances, proanthocyanidins, resveratrol and tannins, which together result in the incredible wine we produce.

Pruning

In order to grow the best quality grapes, the vines in the vineyard are pruned twice, both in winter and summer, to allow more nutrients to flow to the fruit.

Harvest

Our winemakers, thanks to their long experience, decide which is the perfect time to start harvesting in each plot and for each grape to reach its most ideal ripeness.

Selection

Once the grapes have arrived at the winery, they are selected by hand on a classification table to eliminate unhealthy or immature grapes . Those that remain are of great quality and are the basis from which our wines arise.

Winemaking

The grapes that have passed the strict selection process will meet the yeasts in large fermentation vats, where they will undergo a wonderful transformation . The natural yeasts on the skins are the only means for the alcoholic fermentation of the grapes, which gives our wines their distinctive flavor that best reflects the local terroir.
